Zubereitung

Backofen auf 175 °C Umluft vorheizen. Den Blumenkohl in einer Küchenmaschine oder mit einem großen Messer sehr fein hacken, bis es nur noch kleine Krümel sind. Mit dem geriebenen Käse und den Eiern vermengen, mit etwas Salz würzen. Den Low Carb Pizzateig auf einem mit Backpapier belegten Backblech verstreichen und im vorgeheizten Backofen etwa 15 Minuten backen.

Rucola waschen und trocken schütteln. Champignons putzen und in Scheiben schneiden. Den Pizzaboden aus dem Ofen nehmen, mit der Sauce bestreichenund mit den Champignons belegen.

Weitere 5 Minuten in den Ofen, danach mit Rucola und Parmesanspänen bestreuen und servieren.
