Zutaten

400 g Kartoffeln
-
2 Möhren
-
2 Rote Bete
-
2 Pastinaken
-
3 Zehe(n) Knoblauch
-
5 EL Olivenöl
-
Salz
-
Pfeffer
-
15 g Thymian
-
500 g Joghurt mild 3,8 % (Soja-Joghurt für Veganer)
-
15 g Petersilie
Zubereitung
- Kartoffeln, Möhren, Pastinaken und Rote Bete schälen. Kartoffeln längs vierteln, Möhren und Pastinaken je nach Dicke und Länge längs und quer halbieren. Rote Bete in dünne Spalten schneiden. Knoblauchzehen mit Schale mit einem Messerrücken andrücken.
- Alles in einer Schüssel mit 4 EL Olivenöl, Salz und Pfeffer vermischen. Das Gemüse auf einem mit Backpapier ausgelegten Backblech verteilen. Thymianzweige darauf legen und im Backofen bei 200 Grad (Ober/Unterhitze) ca. 40 Minuten backen.
- Joghurt mit 1 EL Olivenöl verrühren. Petersilie waschen, trocken tupfen und fein hacken. Zum Joghurt geben, mit Salz und Pfeffer würzen.
- Das fertige Gemüse mit dem Joghurt-Dip servieren.
